While Visions of Truffles Danced in Their Heads

Today, I’m happy to turn the blog over to Tam John, a nutritionist who specializes in Personalized Functional Nutritional Therapy to balance your blood sugar naturally with food.  Take it away Tam!

Don’t let the fluff of the holiday gatherings’ food in all their overly sweet and processed disguises leave you feeling off and out of it when 2024 rolls in.  Leaning into real lively ingredients is the means to a Vibrant You while you enjoy the natural delight of food just like Mother Nature provides.

 

Tam’s Truffles

Made with real food ingredients, Tam’s Truffles are an energy boosting snack.  They are perfect for any holiday gathering, lunch boxes; and when you don’t have time for breakfast, pop a couple of these instead of fake food ingredient bars, donuts, bagels, or other junkie food.  Call them ‘Keto’ or ‘Paleo’… Just call Tam’s Truffles delicious!

INGREDIENTS:

15 – 20 pitted medjool dates

1 ½ cups raw nuts and seeds – 1/2 cup each – sunflower or pumpkin seeds, pecans, walnuts or sliced almonds

4 Tbsp. coconut oil + extra as needed

1 tsp. real vanilla extract

¾ cup shredded coconut

Pinch sea or Himalayan salt

½ cup cacao nibs

DIRECTIONS:

Put the dates, nuts and coconut oil in a food processor.

Process until finely ground and the mixture will hold shape when pressed between fingers.

If necessary to keep shape, add ½ Tbsp at a time more coconut oil until shape holds.

Put coconut and cacao nibs in separate bowls.

Place parchment on baking sheet.

With a little water in a bowl, wet hands if needed to form a small ball about 1 inch in diameter, pressing together so it holds.

Then roll in coconut and/or cacao nibs as desired.

Cover the sheet with wrap when done and refrigerate until set, about an hour.  Store in an airtight container for a week or two if they last that long!
