Top 3 Favorite Pandemic Food Discoveries

Nope, I have not become a gourmet cook while under stay-at-home orders.  In fact, somehow, I’m finding even harder to find the time to cook these days.  Blame Tiger King.

 

However, I did go out and do the requisite buying of groceries I never would have thought to buy before. Since I don’t have the pantry space to just sit on that stuff, there have been some new recipes made at the Sullivan’s.  So, here are my top 3 favorite pandemic food discoveries.

 

  1. Navy Bean (aka Senate Bean Soup).  Yep, I bought dried beans because, you know, hoarding.  Now what?  This delicious recipe (https://www.dadcooksdinner.com/pressure-cooker-senate-bean-soup/) that only requires 8 ingredients, one of them being “water.”  Even the untrusting men in the house loved it.
  2. Crawfish Etouffee. We missed our annual trip to New Orleans for Jazz Fest, so had to do, what else, a Zoom version with our friends, complete with southern food, music playlist, and custom cocktails.  Our crawfish (you can also use shrimp) etouffee turned out so delicious and was so easy, I asked my husband why we don’t do it more often?  He reminded me that the recipe starts with a stick of butter.  Oh, well, who’s counting the pounds?  COVID-19-Pounds, here I come.   Here is a recipe similar to what we did:  https://www.neworleans.com/restaurants/traditional-new-orleans-foods/crawfish-etouffee/
  3. Seriously, WHY did it take me so long to try this?  After years of scrounging for parking to pick up my carryout, GrubHub has been a revelation.  Sure, it’s a little more costly than going yourself, but this genius website lets me order, pay, tip, and support local restaurants, all from the hot tub!

 

I hope you weren’t expecting anything gourmet.  Even in quarantine, I don’t watch cooking channels.  Bon Appetit!
