This is a favorite in my family from our friend Linda Slaughter of Fort Worth, Texas.
Ingredients
2 beaten eggs
2 cups sugar
1 ¼ cup vegetable oil
2 tsp vanilla
3 cups flower
1 tsp salt
1 tsp baking soda
3 cups chopped apples (I leave the skin on)
1 cup chopped pecans (optional, but delicious)
Directions
- Mix the eggs, sugar, oil and vanilla
- Sift and add the flower, salt, and baking soda
- Stir to combine
- Add the apples and pecans. Fold to combine
- Press heavy batter into two cake pans or one 9” x 13” pan
- Bake at 325 degrees for 45 minutes and golden brown on top
